  • FIFO Enforcement: Rotate prior shift prep to the front; verify Julian date/day dots on all protein containers.

  • Scale Audit: Spot-check 5 random pre-cut portions on digital gram scale; record variance against yield target.

  • Par Gap Audit: Compare Target Par against Current Inventory to lock in the To-Prep quota before lighting burners.

  • Cross-Contamination Barrier: Perforated drip pans in place under all thawing or vacuum-sealed proteins.

Zone 3: Smallwares, Sanitation & Line Armor


  • Tong Discipline: Designated red (raw proteins) and blue/metal (cooked finishing) tongs indexed in clean station wells.

  • Squeeze Bottles: Recharged to 100% capacity; tips calibrated and cut to uniform sauce gauge.

  • Chemical Test: Sanitizer bucket tested with Quat test strips (200–400 ppm); minimum 4 folded dry line towels on station.

  • Finishing Well: Maldon salt bowls, finishing oil drippers, and clarified butter topped off.

Zone 4: 15-Minute Pre-Rush Lock (T-Minus 15)


  • Heat Lane Graduation: Flat-top and broiler zoned into High Sear, Medium Work, and Low Rest lanes.

  • Fryer Lock: Skimmed, sediment dumped, temps stabilized at 350°F, fry baskets hung empty and dry.

  • Pan Consolidation: Remaining prep consolidated into fresh, shallow containers (no hot pans stacked on cold).

  • Label & Date Enforcement: Day dots applied indicating item name, prep date, shift, and closer initials.

  • Final Temp Log: Close-down temperatures recorded across all reach-in boxes and refrigerated drawers.

  • AM Pull Sheet: Tomorrow morning’s protein thaw requirements filled out and clipped to the walk-in door.
