Deployment means deciding where every employee will work during the shift.

The right people, in the right place, at the right time.  **Here is a loose example of how to execute deployment.

 

The Goal

Ensure the restaurant runs smoothly by placing the right employees in the right positions, based on the plan, forecast and current needs.

 

1. Understand the Areas

The restaurant is divided into main areas where employees are deployed.

 

FOH:

– Cashier

– Host

– Service

– Runner

– Dining area

 

BOH:

– Grill

– Fryer

– Preparation

– Assembly

– Dishwashing

 

Support:

– Shift leader

– Receiving

– Cleaning

– Delivery orders

 

2. Match People to Positions

Assign the right people based on their skills, experience and strengths.

– Skill level

– Experience

– Product knowledge

– Speed

– Reliability

– Leadership ability

– Station certification / training

– Individual strengths and weaknesses

 

3. Create the Deployment Plan

Place each employee in their assigned station for the shift.

 

Back of House (BOH):

– Prep

Front of House (FOH):

– Host

4. Consider Peak Hours

Adjust deployment based on expected rush times.

– 5:00 PM: Preparation begins

– 6:00 PM: Additional employees deployed

– 6:30 PM: Critical products checked

– 7:00 PM – 9:00 PM: Peak operation

– 9:00 PM: Gradual reduction of manpower

– 10:00 PM: Closing preparation

 

5. Be Ready for Changes

Have a backup plan for unexpected situations.

– Absence or late arrival

– Equipment breakdown

– Unexpected large order

– Delivery surge

– Product shortage

– Customer complaint

– Sudden sales increase

 

6. Communicate the Plan

Make sure everyone knows where they work and what to do.
