Ingredients
For the Salmon
4 salmon fillets, skin removed
1 tbsp (15 ml) olive oil
½ tsp salt
¼ tsp black pepper
For the Filling
2 cups fresh spinach
½ cup (160 g) feta cheese
¼ cup (60 g) cream cheese or Greek yogurt
1 tbsp (15 ml) olive oil
1 clove garlic, minced
For the Crust & Glaze
½ cup (50 g) breadcrumbs
2 tbsp (30 ml) honey
1 tsp chili flakes
1 tsp Dijon mustard
1 tsp olive oil
Garnish
Fresh parsley
Extra chili flakes
Lemon wedges
Directions
Preheat oven to 400°F (200°C).
In a pan, sauté spinach with olive oil and garlic until wilted. Let cool slightly.
Blend feta with cream cheese (or yogurt) until smooth and creamy, then mix with spinach.
Cut a pocket into each salmon fillet and stuff with the spinach feta mixture.
Season salmon with salt and pepper, then brush lightly with olive oil.
Mix honey, chili flakes, Dijon mustard, and olive oil to form the glaze.
Press breadcrumbs onto the top of each fillet, then brush with the hot honey glaze.
Bake for 15-18 minutes until salmon is cooked through and topping is golden and crispy.
Garnish with parsley, extra chili flakes, and serve with lemon wedges.
