Ingredients

 

🐟 Four large fresh haddock fillets

πŸ¦€ One half pound mixed seafood including chopped shrimp scallops and crabmeat

πŸ₯– One sleeve of crushed buttery crackers

🧈 Four tablespoons melted butter

πŸ§… One small minced shallot

πŸ‹ One half lemon juiced

🌿 One tablespoon fresh chopped parsley

πŸ§‚ A pinch of salt black pepper garlic powder and paprika

 

Instructions

 

1️⃣ Preheat your oven to four hundred degrees and lightly grease a baking dish with a little butter.

 

2️⃣ Melt two tablespoons of butter in a skillet over medium heat. Add the minced shallot and cook for two minutes until soft.

 

3️⃣ Toss the chopped shrimp and scallops into the skillet. Cook for two to three minutes until they just begin to turn opaque.

 

4️⃣ Pull the skillet off the heat. Gently fold in the crabmeat, fresh parsley, a squeeze of lemon juice, garlic powder, salt, and black pepper.

 

5️⃣ Stir half of the crushed crackers into the seafood mixture. The stuffing should be moist and hold together nicely.

 

6️⃣ Lay the haddock fillets flat on a clean surface and season lightly with a pinch of salt.

 

7️⃣ Spoon a generous amount of the seafood stuffing onto each fillet. Carefully roll the fish over the stuffing and place them seam side down in the baking dish.

 

8️⃣ Mix the remaining crushed crackers with the last two tablespoons of melted butter and a pinch of paprika. Sprinkle this mixture evenly over the top of the fish.

 

9️⃣ Bake at four hundred degrees for fifteen to eighteen minutes. The fish is ready when it flakes easily with a fork and the topping is a beautiful golden brown. Ser
